The easiest one I’ve used, and quite like it, is the one that Paypal offers.

I use MerchantOrderForm for our site. It requires decent knowledge of HTML as I recall (it’s been a while since I set it up), but it’s easy to set up and maintain. It also has plenty of “gateways”, which allow multiple payment options.

It depends how serious you are about running an online business. Meaning, is this a real business or a hobby? There are some very inexpensive carts(os commerce, ebay stores, yahoo) that will get you selling online. But these really do nothing in helping to brand, market, or promote client comfort.
